In Faugères the soils are ancient, they are squeezed between the Pyrenees and the Massif central and are 350 million years old. The vineyards are dominated by schist soils perforated with limestone with a small percentage of sandstone as well as clay. Domaine la Sarabande is a relatively modest Domaine with 9.5 Ha spread over 4 vineyard sites.
Tasting note: This is a blend of Marsanne with a hint of Roussanne. The aromas of apricot and peach begin, followed by a silky and luscious palate with an electric finish. The grapes were grown organically and naturally fermented. It was then vinified in barrels to give it its structure. It is a very present wine to be enjoyed with the best game birds.
Food match: Best served with salmon steak, trout or swordfish with a butter.
