Tasting notes: An intense and generous colour with black cherry and violet highlights, an immediate eye-catcher. The fresh, spicy nose is typical of a fine Syrah, with aromas of black pepper, blackcurrant and blackberry. The freshness of the blackberries reveals an invigorating acidity, while subtle touches of fresh liquorice round off the bouquet. On the palate, the wine is extremely smooth, with mellow tannins that envelop the palate. The attack, marked by the richness of blackcurrant, develops into a generous structure, with flavours of black fruit and cocoa. The fresh, lingering finish is marked by a hint of cachou.
Short maceration at around 20°C to preserve fruit and freshness - 1/3 carbonic maceration and from Minervois (Limestone plateaus). Aged on fine lees for 6 month
