First of all I am offering your palate this beauty from the Minervois in the South of France.
The 2015 Chateau Coupe Roses Schiste is an organic offering ( Certfied 2013) from as the name suggests, mineral rich, limestone rich rocky vineyards. The family has owned an estate here since the 17th century so their knowledge of the terroir is second to none. Link that with the consultant enologist of Chateau Rayas in Chateauneuf Du Pape and you have some major provenance here. 100% Roussanne with a bit of oak influence this is a wine all about texture that constantly develops in the glass. Pair with scallops or braised pork belly due to its incredibly refreshing quince like fruit and acidity.

Next in line is another Organic offering but this time from South Africa.
2013 Reyneke Organic Syrah, Stellenbosch.
The owner Johan Reyneke is groundbreaking with his Biodynamic philosophy in Stellenbosch and believes it is the only way to produce true wines of terroir. His Syrah is neither Northern Rhone or Barossa but simply Reyneke.
Bright red fruit flavours with an aniseed spice, liquorice and white pepper dominate the nose followed by an intense perfume of fynbos, and violets. The palate is medium bodied yet linear with great purity and freshness. Focused, fine, spicy tannins follow on to the end of the palate.
