Grillo is an historic crossing of Muscat and Catarratto, often used to make Marsala, and combines the former’s aromatic nature with the latter’sfresh and fruit notes. The grapes are refrigerated at the winery to prevent any oxidation, the fermentation is cool, and the wine spends 6 months on its lees in temperature-controlled tanks – retaining freshness is paramount forGrillo. Apricot, lychee, andpink grapefruitwitha hint of pastry on a zesty palate. Drink with sushi, fresh soft cheeses, and Mediterranean vegetables, raw or roasted.
