A Sauvignon from the Awatere Valley (50%), with vineyards located on both sides of the river - soils on the south bank are deep silt loams and fertile, while the north bank sites are stony, shallow silt loams, and lighter in structure. The remaining 50% of the blend is sourced from the Wairau Valley sites in the Rapaura district. A warmer area where the grapes give a more tropical and ripe citrus characters.
Skin-contact is minimised and cool fermentations with neutral yeast in stainless steel tanks preserve the crisp, fresh varietal nature of the fruit. These vinification techniques provide a range of flavour profiles which results in a multilayered, flavoursome wine. Fine citrus peel notes complemented by white stone fruits. Delicate hints of gooseberry rolling into a layered palate finishing with a lovely balance of texture, weight and a clean finish.
The bright, crisp SB is a perfect match with seafood/barbecued king prawns.
