Maison Chanzy is a highly respected Burgundian producer: their wines are a classical demonstration of premium vineyard sites in Côte Chalonnaise, Côte de Beaune and Côte de Nuits. Le Bois Cassien is one of Chanzy’s Monopole vineyards. It is a southeast facing, at 390m altitude, making it the highest vineyard in Mercurey. The vines are an average of 50 years old and the soils are chalk/clay. Chanzy are Haute Valeur Environnementale level 3 certified – which is the most highly regarded certification for agriculture in France and more holistic than organic farming. It ensures biodiversity in the vineyard and reusable energy.
10-day pre-fermentation and cold maceration. Inclusion of 40% whole bunch in the ferment. Pumping over, delestage and temperature-controlled fermentation before maturation in barrel and then 3 months in stainless steel vat before bottling.
Tasting Note: The inclusion of 40% whole bunch has resulted in a crunchy, aromatic pinot. Layers of redcurrant and cranberry intertwined with some darker mulberry fruit and well integrated oak.
Food match: Soft French cheeses and roasted poussin.
