Based in O Rosal, the most southerly sub-region of Rías Baixas, Santiago was the first wine maker in the whole area to install a stainless-steel tank. Embracing the extra warmth in O Rosal, and some aromatic varieties to boot, this blend spends time on both the skins and lees for maximum texture and aromatic complexity. A blend of 82% Albariño/Alvarinho, 9% Loureiro, 4% Caíño Blanco, 3% Treixadura, 2% Godello. Crisp apple, pear and lime with blossom and a touch of lemon verbena, finishing vibrant and stony. Drink on its own or with the legendary local octopus dish, Pulpo a la Gallega.
