Wildman Wine leads the charge of fun, fresh and fault free Australian Pét-Nat, driven by the spirit of founder Tim Wildman MW. The fruit, predominantly Nero d’Avola and Zibbibo, is now sourced from top-quality regions such as Adelaide Hills and McLaren Vale.
The last couple of vintages in South Australia was cooler than average, with no summer days over 40 degrees (104F) which allowed the fruit to ripen slowly and achieve maximum flavour ripeness without losing freshness or acidity. Made with Fiano 60%, Malvasia Bianca 14% and Pecorino 13%. Whites are picked early to retain acidity and obtain lower alcohol levels, with the Fiano and Pecorino picked the earliest followed by the aromatic varieties and reds a few weeks later.
Tasting Note: A peach-toned hue then bursts with vibrant aromas of white peach, tangerine, and freshly cut lime. The mousse is soft and foamy with notes of juicy peach and nectarine. A splash of smashable watermelon freshness adds drinkability.
