Again another delight from the Zagreus Winery oh the Thracian Velley in Bulgaria.
A natural sparkling wine made with the Dimyat grape variety. Produced using the traditional method. Hand-picked, organically grown grapes are gently pressed, and the juice undergoes spontaneous fermentation in stainless steel tanks. The wine is bottled before fermentation is complete to allow it to finish in the bottle, creating its natural bubbles. Each bottle is then hand-disgorged before release to remove the yeast sediment.
The 2024 vintage is a dry sparkling white wine that is organically grown, unfiltered (initially), and has no added sulfur or sugar. Good texture and fine bubbles.
Tasting note: Straw yellow in appearance. On the nose, with notes of white fruit, honey, toasted almonds, and floral accents. Dry, aromatic, and balanced with flavours of stone fruits, sage, ripe tangerine, and pink grapefruit
