There are seven brothers and cousins involved in I Latium Morini. They changed their approach in 2004, when they decided to keep the best grapes from their vineyards to make wine themselves. Since then, a torrent of accolades from the wine press would suggest that they made the right choice. Seen to be at the forefront of the ‘new wave’ of Soave, Valpolicella and Amarone production, their wines combine beautiful fruit concentration with fresh, bright acidity.
The grapes are picked during from the third week of September to early October. Grapes are destemmed and then pressed. Fermentation takes place at a controlled temperature for 10/15 days, with pumping over. Refinement takes place in stainless steel vats.
Tasting Note: Made with Corvina 35%, Corvinone 35%, Rondinella 20%. Ruby in colour with a powerful and aromatic nose of cherry, strawberry and raspberry fruits. Soft warm and dry in the mouth with elegant and harmonious tannin.
Food match: Salami or Semi Aged Cheeses and Risotto.
