Xavier and Caroline Perromat took over Château Calvimont in 2012, along with Château de Cérons. The couple purchased Xavier’s parents’ estate (Cérons) and actively began to put their own stamp on the vineyards and the wines.
La Quille meaning "Skittle" in French. This is an approachable and fruit-forward expression of Graves and is made from Semillon 60% , Sauvignon Blanc 40% and some Sauvignon Gris. Vineyards are on a plateau of gravel over limestone overlooking the river Garonne. The vines which provide the grapes for this cuvée have an average age of 25 years old, and grow on mixed gravel and clay soils, with sand and shingles over a marine limestone subsoil.
Tasting Note: An expressive nose with notes of flowers and apricot, with aeration, rose petals and lily of the valley. In the mouth, the wine is balanced, smooth and velvety. It offers aromas of citrus fruit, yellow lemon peel and pink grapefruit.
Food match: Great with shellfish, especially Coquilles Saint Jacques (scallops) bordelaise.
