The making of vintage-only Krone Cap Classique is directed by nature: from soil to vine to bottle. The site-specific rocky soils of Tulbagh are like nowhere else in the Cape Winelands. Family-owned, the Rands family purchased the farm in 2012. Brother and sister, Svend and Abigail are involved intimately in all aspects of the estate, from vineyard plantings to marketing. Cellarmaster Rudiger Gretschel leads the winemaking division, a renowned Cape winemaker he pours his considerable knowledge into both the viticulture as well as the vinification, working seamlessly alongside Cap Classique specialist and head winemaker Stephan de Beer.
The classic grape varieties of pinot noir and chardonnay are harvested in the cool of the night. Krone Borealis Cuvée Brut is bottle-fermented and then matures on the lees in their underground cellar.
Tasting note: A blend of pinot noir and chardonnay, lucent red berries, blossom, reflect the purity of the vintage, supported by brushes of toast. Poised and structural, the fruit unfolds in layers of vibrancy; plums, forest berries, raspberries, and cherries. Fine acidity threads through a pillowy, expansive mousse, bringing length and lift to the savoury finish. Extended lees ageing of 18 months builds depth and evolving complexity, and will develop rich, biscuity notes over time.
Food match: The structure lends salmon with crispy skin, rolled porchetta and duck.
