The grapes are sourced from a 9 hectare parcel of Sauvignon Blanc at 750m altitude. After harvesting by night (in cooler temperatures to maintain freshness) and selection, the grapes are cold-macerated for 10 hours before pressing. Temperature-controlled fermentation takes place in stainless steel, and then the wine remains on fine lees for four months before bottling.
Appealing varietal aromas of nettle and green pepper balanced by notes of tropical fruit. The palate is vibrant with juicy grapefruit acidity, herbaceous characters and good length.
