The Saint M cuvee is primarily composed of Grenache and Cinsault along with a smaller quantity of Syrah, Mourvedre, and Cabernet Sauvignon. Conditions here are ideal for producing light and elegant Provencal rosés thanks to the warm summer days moderated by cooling breezes from the nearby coast and mountains.
Once in the winery the fruit undergoes a short cold maceration to extract plenty of aromas and a subtle pink hue from the grape skins. The must is then vinified in temperature-controlled stainless steel tanks and aged on the lees to add polish and a well-rounded texture. The result is a vibrant rosé which is bursting with raspberries, red cherries and delicate orange blossom notes.
