An unique take on Pinot Noir from two growers' vineyards of the Southern Languedoc. This 'old money' Pinot Noir is a pure expression of the grape and a homage to French winemaking.
Picked at optimum ripeness, balancing phenolics and acidity then cool vinified to enhance the fresh fruit flavours. A small portion of the wine (around 15%) spends some time in oak to give added character and weight. It has a warm, rich nose with aromas of dark wild cherry and just a hint of oak. The palate is nicely balanced with an slightly savoury bitterness provided by ripe tannins.
Perfect with a baked ham, grilled lamb or even cold meat platters.
