Nascetta (pronounced Nas-ketta) is a rare find in the land where Nebbiolo is king as the latter was often planted to the detriment of all other varieties. And as we know, there was not a lot to be done about it without, quite literally, chancing your arm in order to do so. Luckily, such punishments for uprooting Nebbiolo and deciding to grow something else have eased, so the region has recently (in relative terms) seen a resurgence of these lesser-known yet just as interesting varieties. Nascetta is a slightly aromatic variety, with lots of character, and we think you’ll find it rather easy to drink. It’s the guest at a party who’s at the centre of everything and gets along with everybody, so food pairing will be a cinch.
After gentle pressing, the juice is fermented slowly at cool temperatures in stainless steel, which allows the aromatic nature of the variety to take centre stage in the final wine. A period of lees-aging (8 months) provides texture and body to an otherwise simple and floral white – it takes it up a level, so ensure that you choose some suitably delicious food to pair with it. Now, in the spirit of bucking the traditional ways of food pairing (‘if it grows together, it goes together’), this wine would work really well with Spaghetti Carbonara (more traditionally associated with Lazio rather than Piedmont). The fatty guanciale, rich egg yolks and lashings of salty Pecorino are all perfect for this aromatic white with the texture to match. Or if you prefer to keep it even simpler, enjoy with bag of Torres Truffle crisps and a cosy evening on the sofa.
