A superbly rich South African sparkling! Produced using Methode Cap Classique (Champagne method) with 100% Chardonnay grapes. The base wine was kept on the lees for 8 months initially during the first fermentation and 10% of the Chardonnay was barrel fermented. After second fermentation, the wine was left on it's lees for 120 months, bringing this wine's signature yeasty character.
This is a Blanc de Blancs with great finesse - crisp, rich and creamy and hints of fresh lime and citrus. Excellent value for money!
