Hinterland specialises in sparkling wine and grows estate fruit with naturally high acidity and low sugar levels, ideal for traditional-method production. Jonas Newman and Vicki Samaras founded the winery in a converted dairy barn that once housed 48 cows. Leaving their former careers of restaurants (Jonas was already involved in the wine trade) and Big Pharma (Vicki studied plant pathology), they trained at 13th Street Winery Niagara for 4 years before planting vines in P.E.C. in 2003. Partners in life and business, they made the decision to focus exclusively on sparkling in 2008 and have been producing some of the most sought-after wines in Canada.
Chardonnay grapes were grown in Hinterland’s Hillier Clay-Loam soils, producing a base wine that proved excellent for sparkling. The soil composition and the wine was in aged in five-year-old 500-litre barrels before tirage (drawing of the wine from the barrel), then aged sur lattes in bottle for 36 months before disgorgement in November.
Tasting Note: Dry, crisp, and polished, with notes of citrus, pear, wet limestone, and a touch of toast. The palate is balanced and rounded, showing white orchard fruit, citrus, and pastry, supported by lively acidity, fine mousse, and a distinct mineral streak. Elegant and precise, it drinks beautifully now but will also reward up to five years of cellaring.
