This ice wine is a richly concentrated dessert wine made from 100% Vidal Blanc.
Icewine requires a much later and more dramatic picking. Grapes are left on the vine into the depths of winter, where they freeze naturally and concentrate sugar, acidity, and flavour. They are harvested in the early morning once temperatures fall to at least –8°C. Pressed immediately while still frozen, the grapes yield just a small amount of intensely concentrated juice, producing a wine that is both rare and luxurious.
Tasting Note: Fragrant and luscious, with aromas of lychee, ripe mango, pineapple, and honey. Rich yet fresh on the palate, it shows baked apple, candied pear, orange oil, and marmalade layered with golden honey, balanced by bright acidity and a long, smooth finish.
Serve this wine well-chilled at around 10°C (50°F), and pour it into smaller glasses or flutes rather than a standard large wine glass to best concentrate its aromas.
