The wines of the Minervois, just north of Carcassonne, are predominantly red. However there are a number of producers who make intriguing whites. With a classic blend of Roussanne and Marsanne vinified in a mixture of stainless steel and new and old oak in equal proportions, this is beautifully subtle and balanced. Quince and honey show here with delicacy reflecting the feminine touch of the sisters who own the property.

2012 Faugeres, Domaine La Sarabande, Languedoc, France - £15.99 or 2 for £30
Exhibiting red fruits, spice-box, licorice and cured meats, the 2012 Faugères Tradition checks in as a mix of 60% Grenache, 25% Carignan and 15% Syrah that was brought up in 60% stainless steel and 40% in neutral barrels. It has lots to love, with medium-bodied depth and richness, smoking purity of fruit and a gorgeous texture that carries through the finish. Even more fascinating is the fact that the wine is a synergy of Australian winemaking and Irish viticulture.
