100% Pinot Nor from the fresh terroir of western “Aude". Vinification without added sulphur - Low temperature fermentation - Light pumpover - Cold soak for 10 days. Ageing in stainless steel tanks on fine lees (Fining).
Tasting note: A brilliant, youthful ruby colour and perfect clarity makes this wine a real jewel in the glass. The nose is highly aromatic, revealing delicate notes of
cherry and raspberry. When aired, subtle notes of cinnamon stick enrich the aromatic profile. On the palate, the tannins are mellow, but the body is very present. The attack of wild strawberries quickly evolves into an explosion of sweet spices and cocoa. The finish, marked by flavours of mocha and tonka bean, is complex and delicate, offering great length and subtle depth.
