This Grauburgunder is grown on south-facing loess and clay soils with a limestone substrate.
Single cane training, green harvest, and manual canopy work all lead to reduced yields and
better quality. Green cover is also used to promote an organic nutrient ecosystem.
Grapes were gently crushed using a pneumatic press. Stainless steel fermentation at 18°C, at
a slow pace to preserve the fruitiness. A third of the overall volume was spontaneously
fermented in large wooden barrels and fermented in used barriques. After fine lees ageing,
then bottled unfined and only gently filtered.
Tasting Note: Dry. Aromas of ripe stone fruits, citrus, orange blossom and honey. the palate has pear, apricot, honey with light spice - rich, smooth and complex. A beautiful mouth full of flavour with minerality and refreshing acidity balancing throughout.
Food match: Seafood with creamy sauces, mussels in white wine sauce.
