The 2023 SCRITCH Chablis is a bright, energetic expression of Chardonnay with classic Chablis minerality. The nose shows aromas of lemon zest, green apple, citrus blossom and a subtle iodine/seashell character. On the palate it is fresh, precise and mineral-driven, with crisp acidity supporting flavours of citrus, orchard fruit and wet stone. A chalky texture and saline edge carry through to a long, clean finish.
Drinking Window: Enjoy now for its youthful freshness or over the next 3–5 years as the mineral complexity develops. (Estimated based on style and vintage.)
Food Pairing Suggestions: Oysters and shellfish, Grilled white fish, Herb-crusted cod, Goat's cheese, Mushroom risotto
The fruit comes from a parcel in Beine, in the Chablis region, planted on clay-loam soils over Barrois limestone and Exogyra marls, the classic Kimmeridgian-type geology that gives Chablis its distinctive mineral profile.
Winemaking is deliberately minimalist; Long whole-cluster pressing, Native (indigenous) yeast fermentation, Fermentation in stainless steel tanks, Lees ageing with malolactic fermentation, Gravity racking, Bottled without fining Produced from organically farmed vineyards
Cyprien Arlaud is the winemaker behind the renowned Domaine Arlaud in Morey-Saint-Denis, Côte de Nuits. The family estate is widely respected for its organic and biodynamic approach and for producing terroir-focused Burgundy wines.
SCRITCH is a separate contemporary range of organic white Burgundies created by Cyprien Arlaud. The project sources fruit from carefully selected growers across Burgundy and vinifies the wines in Morey-Saint-Denis. The range includes Chablis, Mâcon, Bourgogne Chardonnay, Bourgogne Aligoté and Hautes-Côtes de Beaune.
The name“SCRITCH” refers to the sound of chalk writing on barrels and slate boards in Burgundy cellars—a nod to both traditional cellar practices and a childhood memory of Cyprien's children drawing with chalk during harvest and vinification.
