The“Douby” cuvée comes from a small parcel (approximately 0.8 hectares) in the Douby sector of Morgon. The vineyard is planted with 40-year-old vines on predominantly pink granite with pockets of harder blue stone (bluestone/schist-like rock), which contributes both Morgon's characteristic fruit intensity and a firmer structural backbone.
The site sits at roughly 300 metres elevation and is farmed organically. Pauline Passot is known for low-intervention viticulture and vinification, emphasizing transparency of terroir and purity of fruit. Fermentation is carried out using indigenous yeasts, with traditional semi-carbonic whole-bunch maceration, followed by élevage primarily in concrete tanks. The wine is typically bottled with minimal manipulation, often unfined and unfiltered.
In the short time since taking over her family's estate, Pauline Passot has made a name for herself as the producer of high quality, balanced wines that are very expressive of their terroirs. One of her first steps was to begin conversion to organic methods. Her winemaking is traditional: fermentation is in a mixture of steel and 600-litre casks, there is little destemming, little extraction and a low fermentation temperature. It is the precise attention to detail that makes her wines shine.
