In the short time since taking over her family's estate, Pauline Passot has made a name for herself as the producer of high quality, balanced wines that are very expressive of their terroirs. One of her first steps was to begin conversion to organic methods. Her winemaking is traditional: fermentation is in a mixture of steel and 600-litre casks, there is little destemming, little extraction and a low fermentation temperature. It is the precise attention to detail that makes her wines shine.
A vibrant and expressive Gamay from one of Beaujolais' highest-altitude crus, the 2020 Chiroubles “Claudius” offers enticing aromas of fresh raspberry, wild strawberry, violet, and crushed stone. The palate is light to medium-bodied yet concentrated, with juicy red berry fruit, subtle floral notes, and a distinctive mineral freshness. Silky tannins and bright acidity provide balance and elegance, leading to a long, refreshing finish. A beautifully pure and energetic wine that showcases the finesse and charm of Chiroubles.
Food pairing: Charcuterie, roast chicken, grilled salmon, mushroom dishes, or soft-ripened cheeses.
Serving suggestion: Best served lightly chilled at 14-16°C.
