Inspired by the rural Italian roots his family had rediscovered while reviving a small vineyard in the 1960s, John Pennachetti Sr saw potential in an abandoned orchard beneath the limestone cliffs of the Niagara Escarpment. Four decades after he and his sons planted some of Niagara’s first Riesling and Chardonnay vines there, Cave Spring has helped define which grapes thrive on the Escarpment. This wine is a compelling expression of Gamay from older vines rooted in the vineyard’s limestone-clay soils.
Tasting Note: Medium ruby in colour, with layered aromas of redcurrant, raspberry, red cherry, basil, tarragon, and red rose, lifted by subtle spice. Medium-bodied and richly textured, it combines juicy red fruit with pomegranate brightness, refined tannins, and delicate acidity. The finish is long, savoury, and gently peppery, with lingering notes of thyme, sage, and wood spice.
Food Match: Tomato based pizza or pasta, Moroccan-style dishes, vegetarian paella, Southern-style barbecue ribs, or duck breast.
