Based in Westhofen, the Wittmanns have been making wine in the Rheinhessen since 1663, farming organically since 1990 and biodynamically since 2004. This Weissburgunder was fermented and matured in old Doppelstück, large barrels made of German or Austrian oak, with some of the skins left in. This results in a deliciously soft, creamy texture to balance the wine’s fresh, juicy pear and lemon fruit., finishing with fine acidity and some nutty complexity. A great pairing for pasta dishes involving cheese (a home cooking staple there as here), as well as asparagus with hollandaise or pan-seared pork or veal.
