The San Cassiano Ripasso Valpolicella Superiore has ripe blackcurrant and hebaceous aromas lead to a medium bodied palate of cherryish fruit, with soft tannins and good acidity. Fresh with a full-bodied structure, but still light and enjoyable with any pairing. Notes of red fruit and velvety on the palate.
Ripasso is a traditional method of Valpolicella which involves a second maceration of Valpolicella Superiore wine on the skins of grapes used for Amarone, which would have been dried for at least 100 days. This second maceration usually lasts about twenty days and the resulting wine takes on further the colour and concentration from the skins, without the heaviness of an Amarone.
Through his job as a tenant farmer Albino Sella acquired several hectares of land in 1964. From the 1980s onwards, the estate grew to reach four hectares of wines and 3000 olive trees by the year 2000, under the management of Albino’s grandson Mirko Sella.
