Since 2001, Javier Domnguez’s Dominio do Bibei has been widely recognised as the leader of quality winemaking in Ribeira Sacra, working tirelessly to revive the region’s indigenous varieties. A blend of 90% Mencia, 7% Brancellao, 2% Garnacha Tintorera, 1% Sousão. Javier ferments and matures the wine in large, old French oak, for texture more than flavour. The resultis vivid raspberry and red cherry, wild herbs, lavender and warming spice on a silky, bright palate. Drink with grilled lamb, hearty vegetables or a mushroom risotto.
