Domaine Badoz is a small family run wine estate located in Poligny in the heart of the Jura since 1659, transferring traditional winemaking techniques and local know-how from father to son for more than 10 generations. In 1970 Bernard Badoz set about a varietal re-planting programme to match varietals with the different soils found in the ‘Roussots’ vineyards of the family domaine. This rigorous work enabled him to develop high end wines combining an expression of grape varietal with that of terroir. In 2003 his son Benoit took over and brought about further changes and new wines which further improved the overall quality.
Ranked among the greatest wines of France, Vin Jaune is made exclusively from the Savagnin grape variety. It is aged in oak barrels for 6 years and 3 months. A veil of yeast forms on the surface of the wine, and protects it from any oxidation. It is during this long aging that it acquires its spicy aromas of nuts, almonds or curry. A perfect accompaniment to strong cheeses, nuts, cream based dishes, shellfish, snails and even bitter chocolates. Truly something special!
