Founded in the 11th century by hermits of Sainte Cécile d'Estagel Abbay, making wine for pilgrims passing through en route to Santiago de Compostela. Things are rather more up to date these days, the estate working 80 hectares of breezy Mediterranean land and eschewing the use of new oak entirely. This, their estate white, is made from 60% Roussanne, with the balance Grenache Blanc and Viognier, all farmed organically. Harvested early and fermented cool, the result is gently aromatic with a balance of ripe nectarine fruit and flinty freshness, finishing fresh and pleasantly pithy. A great apéritif, but also a good pairing for asparagus, grilled fish or chicken in a cream sauce.
