The Yotov family’s estate lies on the site of one of Bulgaria’s first breweries, an unlikely-looking sandy plain benefiting greatly from its proximity to the Danube. The grape in this case is the local Gamza, fermented in stainless steel tanks without any oak ageing. Fresh, fruity and medium-bodied, it shows ripe red cherry and berry notes, silky tannins and a sweet-fruited finish. Great by itself, some charcuterie and soft cheeses.
