?Many aspects of traditional business practices in Burgundy are changing, and Domaine Billard is an excellent example of the new way of operating a domaine. Jérôme Billard took over the family's 12.5 hectares of vineyards and immediately began estate bottling all of their wines, whereas his father had previously sold off all of his wine to the local cooperative. Jérôme has also instituted a new philosophy in the vineyard, farming with respect for nature following organic principles while practicing quality conscious viticulture. Additionally, all wines are fermented with native yeasts.
La Combe Bazin is a lieu dit in Saint-Romain nestled between 900-1200 feet in elevation along a valley that is tucked behind Meursault and Monthelie. The wine is made from 100% Chardonnay grapes which are barrel-fermented with 25% new wood. It is aged on the lees for a year and bottled with minimal fining or filtration. La Combe Bazin produces a wine with intense acidity and minerality that balances perfectly with the round, rich mouthfeel of a barrel-fermented Chardonnay.
