Stéphane Robert has moved his wine-making operations from a small cellar in Saint Péray up into the hills above the town. The old railway tunnel that gives the domaine its name is the perfect environment for vinification and élèvage. The ambient temperature never rises above 15°C even in the height of summer and there is plenty of natural humidity.
In 2018, after a wet spring, a hot, dry summer gave a good-sized crop of ripe, healthy grapes. The whites were picked early, at the end of August, in order to preserve the maximum of freshness and acidity with the syrah following a week later.
Vinification is both traditional and innovative with flexibility at the heart of all decision making. A small but variable percentage of whole bunches are used where appropriate and ageing is in a mixture of small barrels, mostly three year-old casks purchased from Château La Nerthe in Châteauneuf du Pape and larger, 1000 litre, oak vats. The result in 2018 is a sublime range of rich, aromatic, structured wines that are amongst the very finest of the region.
From vines up to 50 years old in the villages of Mauves, Tournon and Glun. The bunches are 90% destemmed, fermented in stainless steel vats at a relatively low temperature, and then aged in 5 year-old barrels for 12 months. Intensely aromatic with lovely red and blackberry fruit. Rich and succulent with fine, ripe tannins and fresh acidity. Drink 2022-2030.
