Nicolas Boiron is now in charge of this domaine, which has been making wine in Châteauneuf-du-Pape since the 19th century. The estate continues to produce full-bodied Châteauneuf using at least 75% grenache. Their vines cover 30 hectares across 40 different parcels, with an impressive average age of more than 50 years.
All of their harvesting is conducted by hand. The majority of the wines are aged for twelve months in large oak foudres, although the domaine is starting to introduce some smaller demimuids in the cellar. The top cuvées are given an extra 6 months in cask before bottling.
75% Grenache, 12% Mourve?dre, 10% Syrah & 3% Vaccare?se, Counoise & Cinsault. 60% of the bunches are fermented whole with a lengthy maceration of up to four weeks. The wine is then aged in both large oak foudres and smaller demi-muids. Rich and spicy, this is full-bodied, traditional Châteauneuf built to last. Drink 2022-2028.
