Elevated vineyards, coupled with the refreshing influence of the Atlantic-born Vent Cers, create an exceptional environment for producing wines of precision and elegance. The combination of altitude, a cool climate and limestone-rich soils yields fruit of outstanding quality, marked by purity, freshness and complexity. From this remarkable terroir, Montsablé Réserve is crafted to showcase finesse, balance and a true sense of place.\u003c\/p\u003e\n\u003cp\u003eWinemaking: Burgundian methods are used for the vinification with a gentle extraction by punch-down of the cap. Low temperature vatting (24°C) to preserve the fragile and subtle notes of the Pinot Noir. Altitude, climate and limestone-rich soils combine to produce fruit of remarkable purity and finesse. Carefully selected vineyard parcels within the Haute Vallée benefit from a long, slow ripening season, preserving natural acidity while enhancing aromatic complexity. The vines, aged between 20 and 30 years, are rooted in argilo-calcaire soils, bringing depth, minerality and refinement to the finished wine.\u003c\/p\u003e\n\u003cp\u003eWinemaking: The wine is left on its lees to add complexity of flavour, texture and weight whilst retaining refreshing ripe fruit character.
