They liked the name and the fruit produced beautiful wine and so decided that it was high enough quality to be bottled on its own. Thorny Devil draws on fruit from a number of sub regions of McLaren Vale, all of which are old, dry grown and bush trained. Picking times and ferments vary but the common thread is of picking on the way up.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAll ferments are wild with differing percentages of whole bunch, though every ferment has some. Extraction regimes are very light, with the aim of infusion rather than heavy extraction. Aside from a few days of heat in March, the season continued, with the moderate temperatures and mild conditions allowing for picking all varieties at the ideal moment. It was produced with 86% Tempranillo, 8% Graciano, 4% Mazuelo and 2% Garnacha Tinta from their 300 hectares of vines in their Ygay estate on limestone and clay soils with alluvial influence. \u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eThe grapes were picked between the 27th of September and the 15th of October, and each plot and variety was vinified separately in stainless steel, matured in American oak barrels for 26 months, then blended and kept in concrete for a few months until bottling, which was a longer élevage this year. It's very spicy, peppery, with a combination of berry fruit and some incipient tertiary aromas, hints of forest floor and truffle. It's very Rioja, with clout, elegance and freshness and the elegant tannins that are the signature of 2021. It comes in at 14.3% alcohol with a pH of 3.6, denoting ripeness and balance.
