‘A gentle transformation from grapes to wine’ is the aim of the team at Dominio do Bibei, a well-respected winery in Galicia's Ribeira Sacra region. Led by owner Javier Domínguez, the team employ a refreshingly low-tech winemaking process that’s almost silent, allowing gravity to do the hard work as the wine passes through a series of neutral wooden vessels.

Based at high elevations of around 500-600 metres above sea level, the vineyards are mainly given over to mencía grapes, with pockets of other native varieties such as brancellao and mouratón also in place. These are vinified separately to maintain their individual characters and later blended to create distinctive wines that are true expressions of their terroir.
